My family are HUGE chocolate lovers and so we definitely make brownies a lot.
This is THE the yummiest layered brownie ever!
Now I layered mine with oreo cookies but you could really use just about any cookie or dare I say candy bar??!
Then I made homemade royal icing and crushed up some candy canes for a sweet topping.
I made this for the teachers at Lauren’s school this week and I hope they loved it. I know ours at home was gone in less than a day. So here is the recipe for the best-layered brownie ever!
The Best Layered Brownie Recipe
Ingredients:
- 5.5oz unsalted butter
- 4 eggs
- 5.5oz light brown sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon cocoa powder
- 7oz semi sweet chocolate, finely chopped
- a pinch of salt
- a package of Oreo cookies/ or candy bars of choice
- homemade royal icing (see recipe)
- crushed candy cane sticks
Directions:
Step 1 – Preheat oven to 350 and crease an 8×8 glass baking dish.
Step 2 – Melt butter over medium heat then add chocolate and stir until melted and smooth.
Step 3 – Whisk eggs until fluffy and start adding sugar in slowly. Whisk until mixture is smooth and not granulated. Then whisk in the melted chocolate mixture.
Step 4 – Next add in all the dry ingredients. Start with 1/2 and then slowly keep adding the rest until mixed thoroughly.
Step 5 – Slowly pour brownie mix into glass baking dish. Only pour 1/2 of the mix and save the second half.
Step 6 – Next, lay a layer of Oreo cookies on top. Then fold over the top the rest of the brownie mix.
Step 7 – Place in oven and back for 30-35 minutes or until a toothpick is inserted into the middle and comes up clean.
Step 8 – Set on a wire rack to cool.
Step 9 – Once cooled, transfer to wax paper and using a spatula cover the top of the brownie with the homemade royal icing. Then add your crushed candy cane sticks sprinkled across the top of the icing. Enjoy!
Homemade Royal Icing
Ingredients
- 2 Cup Powdered Sugar
- 1 Egg White
- 1/2 Tsp Water
Instructions
- Whisk egg white until fluffy.
- Add water and whisk together.
- Start adding (spoon by spoon) the powdered sugar and whisk. Keep adding until the mixture is thick and creamy.
- Cover and refrigerate if not using immediately.
