If you are anything like me, you are probably eating everything pumpkin flavored that you can possibly get your hands on now that it’s Fall. Pumpkin bread, pumpkin pancakes, pumpkin pie… I don’t discriminate! Since we also drink smoothies multiple times a week in our home, like our chocolate avocado smoothie and smoothie bowls, I decided to try creating a healthy pumpkin smoothie.
It was a good thing I did because the kids chugged it down fast. I love the fact that I was feeding them something nutritious and equally delicious. The whip cream on top and fun straw may have also played a part because it just looked so enticing!
Did you know pumpkins are rich in Vitamin A, fiber and potassium? They contain cancer fighting agents and are supposed to help keep your skin wrinkle free. What?! Excuse me while I go make another smoothie for myself.
Wanna try making your own? It’s super easy! I just used ingredients I had on hand and this is the recipe I came up with.
Healthy Pumpkin Smoothie
Ingredients: (serves 2-3 people)
- 2 frozen bananas
- 6 tbsp canned pumpkin
- 2 cups unsweetened almond milk
- 1 1/2 tsp agave syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- whip cream (as much as you can top off!)
*TIP: Don’t throw away ripe bananas. Peel, break in half, and store them in a container or zip lock bag in the freezer. These are perfect for smoothies and for baking banana bread.
Whip all the ingredients except the whip cream in the blender. I recommend using frozen bananas as it adds a nice, smooth texture without watering down the flavor with ice. One of the great things about making your own smoothie is you can increase or decrease any of the ingredients to your own liking. I use almond milk because my husband and I are lactose intolerant. I typically use whole milk for my children. You can also modify the syrup content or not add it all.
Since pumpkin has a distinct taste, I think the bananas help balance out the flavor.
The temperature is still in the 80’s here in Georgia so we will be drinking a lot of these in the meantime.
My little Emmy sure does love it. The girl can down the entire glass by herself.
