In a pan caramelize the walnuts with the brown sugar – continually mix/toss over medium to low heat with the brown sugar, add in 1/4 tsp of water to help liquefy the sugar. Once sugar is melted and coating the walnuts, take them off the heat and spread out on a sheet of wax paper and cool.
Spray a nonstick pan with olive oil cooking spray and heat the pan on medium heat. Toss in cubed chicken and season with a little salt and pepper. Toss chicken in the olive oil cooking spray continually so it does not burn and cooks thoroughly. The PAM olive oil cooking spray will give it a great taste!
Mix all ingredients together, sprinkle with crumbled goat cheese on top and serve with a balsamic vinaigrette dressing. And you are done!
