I love that spring is here and it’s time for fruit and citrus salads and beautiful weather dining alfresco.
My family eats a lot of fruit so coming up with fun combinations and sneaking in some healthy ingredients is key for me.
This salad could actually be a whole meal in itself with the chicken, greens, and fruits altogether.

So here is what you need.
Strawberry Kale Spring Salad
Ingredients:
– 1 cup strawberries sliced in half
– 1/2 cup walnuts
– 1/2 red onion chopped
– 1 cup cubed chicken
– crumbled goat cheese
– kale
– 1 tbsp brown sugar
– olive oil cooking spray
– balsamic vinaigrette dressing

Directions:
Step 1 – In a pan caramelize the walnuts with the brown sugar – continually mix/toss over medium to low heat with the brown sugar, add in 1/4 tsp of water to help liquefy the sugar. Once sugar is melted and coating the walnuts, take them off the heat and spread out on a sheet of wax paper and cool.
Step 2 – Spray a nonstick pan with olive oil cooking spray and heat the pan on medium heat. Toss in cubed chicken and season with a little salt and pepper. Toss chicken in the olive oil cooking spray continually so it does not burn and cooks thoroughly. The olive oil cooking spray will give it a great taste!
Step 3 – Mix all ingredients together, sprinkle with crumbled goat cheese on top and serve with a balsamic vinaigrette dressing. And you are done!
Not only is this a yummy and filling dish but the clean up is super easy since cooking spray washes off perfectly.
